firstly, in a mixer jar take 1 cup palak, 2 chilli and ¼ cup water.
grind to smooth paste adding water if required. keep aside.
in a large wok, heat 2 tbsp oil. add 1 tsp cumin, ½ inch cinnamon and 1 bay leaf. saute until the spices turn aromatic.
now add ½ onion, 1 tsp ginger garlic paste and saute until the onions soften slightly.
add ½ carrot, ½ capsicum and saute keeping the veggies crunchy.
now add prepared palak paste and cook for 2 minutes or until the raw aroma goes.
further add 3 cup of cooked rice, ½ tsp garam masala and ½ tsp salt.
mix gently making sure all the spices are well combined.
add 1 tbsp lemon juice and mix well.
finally, enjoy palak rice recipe with raita or pack it in your lunch box.
