firstly, in a mixer jar take 1 cup oats and finely powder it. make sure to use unflavoured quick or rolled oats.
transfer the oats powder to a large bowl.
add ¼ cup besan, 1 tsp cumin and 1/4th tsp turmeric.
also add ½ tomato, ½ carrot, ½ onion, ½ capsicum, ¼ cup curd and ½ tsp salt.
mix well combining everything well.
further, add ½ tsp chilli flakes and ½ cup water.
mix well forming a smooth batter.
rest the batter for 5 minutes, or until the oats and rava are soaked well.
now add water as required and form a smooth batter.
just before making an omelette, add ½ tsp eno fruit salt and mix gently.
mix until the batter turns frothy.
immediately, heat 2 tsp oil in a pan and pour the prepared batter.
swirl a little to spread uniformly.
sprinkle chilli flakes, cover and cook for 2 minutes.
once the base is cooked well, flip over and cook both sides.
also, slit in the centre and add oil, for roasting ½ tsp butter, few coriander for extra flavour.
finally, oats omelette recipe tastes great when served hot and with lots of vegetables.
