firstly, in a mixer jar take 1 potato and ½ cup water.
grind to smooth paste.
transfer the aloo paste to a large bowl.
add 1½ cup rice flour, ½ cup rava, ½ tsp chilli flakes and 1 tsp salt.
mix well making sure everything is well combined.
now add 2 tbsp onion, 2 tbsp capsicum, 2 tbsp carrot, 2 chilli and 2 tbsp coriander.
mix well making sure everything is well combined.
cover and rest for 20 minutes or until the rava is soaked well.
after the batter has rested well, add ½ tsp eno fruit salt and mix gently.
once the batter turns frothy, immediately pour over the hot tawa.
pour half tsp oil, cover and simmer for 2 minutes.
keep the flame on medium and cook until the top of the pancake is cooked completely.
flip over and cook both sides.
finally, enjoy instant rice pancake with coconut chutney.
