Ingredients

  • 1 potato boiled & chopped
  • cup rice flour
  • ½ cup rava
  • ½ tsp chilli flakes
  • 1 tsp salt
  • 2 tbsp onion finely chopped
  • 2 tbsp capsicum finely chopped
  • 2 tbsp carrot finely chopped
  • 2 chilli chopped
  • 2 tbsp coriander finely chopped
  • ½ tsp eno fruit salt

Instructions

  • firstly, in a mixer jar take 1 potato and ½ cup water.
  • grind to smooth paste.
  • transfer the aloo paste to a large bowl.
  • add 1½ cup rice flour, ½ cup rava, ½ tsp chilli flakes and 1 tsp salt.
  • mix well making sure everything is well combined.
  • now add 2 tbsp onion, 2 tbsp capsicum, 2 tbsp carrot, 2 chilli and 2 tbsp coriander.
  • mix well making sure everything is well combined.
  • cover and rest for 20 minutes or until the rava is soaked well.
  • after the batter has rested well, add ½ tsp eno fruit salt and mix gently.
  • once the batter turns frothy, immediately pour over the hot tawa.
  • pour half tsp oil, cover and simmer for 2 minutes.
  • keep the flame on medium and cook until the top of the pancake is cooked completely.
  • flip over and cook both sides.
  • finally, enjoy instant rice pancake with coconut chutney.
