firstly, in pan take enough water, 1 tsp salt and get to a boil.
add 1 cup soya chunks and boil for 5 minutes.
drain off the water and squeeze off soya. keep aside.
pulse grind the soya chunks to a coarse texture. keep aside.
in a pan heat 2 tbsp oil and saute 3 clove of garlic.
add ½ onion and saute until onions shrink slightly.
now add 2 tbsp sweet corn, 2 tbsp peas, 2 tbsp carrot and 2 tbsp capsicum.
saute until the veggies shrink slightly.
further add 2 tbsp tomato sauce, 1 tsp chilli sauce and ½ tsp salt.
mix well making sure everything is well combined.
add in the prepared soya mixture and mix well.
now add 2 tbsp mayonnaise, ½ tsp chilli flakes and ½ tsp mixed herbs.
mix well and do not over-cook, as there are chances for mayo to split.
keema stuffing is ready. keep aside.
to prepare the toast, spread butter and green chutney on the bread slice.
top with prepared soya keema stuffing.
and again top with cheese.
now cover and toast until the cheese melts.
finally, cut the toast into half and enjoy soya keema cheese toast.
