firstly, add 1½ cup soya chunks in boiling water along with 1 tsp salt.
boil for 10 minutes or until the soya softens.
drain off the water and rinse with cold water.
squeeze off the water and keep it aside.
to prepare the masala powder, in a pan take 1 tsp cumin, 1 tsp coriander seeds, 1 tsp pepper and 1 tsp fennel.
also add 1 inch cinnamon, 4 pods cardamom, 4 cloves, 1 bay leaf, 2 tbsp dry coconut and 6 dried red chilli.
dry roast on low flame until the spices turn aromatic.
cool completely, and grind to a fine powder. keep aside.
in a large pan heat 2 tbsp oil. saute ½ onion, 5 cloves garlic until it shrinks slightly.
further, add 1 tomato until it turns soft and mushy.
now add prepared masala powder, ½ tsp turmeric, ½ tsp salt and saute until the spices turn aromatic.
add in 1 cup water and mix well adjusting the consistency.
now add boiled soya and mix well.
furthermore, add few capsicum, tomato and curry leaves.
cover and simmer for 5 minutes or until the flavours are absorbed well.
give a mix and add 2 tbsp tomato sauce and 2 tbsp coriander.
finally, enjoy soya roast with roti or rice.
