firstly, soak 1½ cup basmati rice for 20 minutes.
in a pressure cooker, heat 2 tbsp ghee and 2 tbsp oil.
add 1 tsp cumin, 1 bay leaf, ½ tsp pepper, ½ tsp cloves, 1 inch cinnamon and 1 javitri.
saute until the spices turn aromatic.
further add 2 onion, 1 ginger garlic paste and 1 chilli.
saute until the onions turn golden brown.
also add 1 carrot, 1 potato, 5 beans, 3 tbsp peas, ½ capsicum and 1 tomato.
saute for 2 minutes or until the vegetables shrink slightly.
keeping the flame on low add ¾ cup curd and mix well.
add ½ tsp turmeric, 1 tsp chilli powder, 2 tsp biryani masala, 1 tsp salt, 2 tbsp coriander and 2 tbsp mint.
saute on low flame until the spices turn aromatic.
further, add 2½ cup water and get to a boil.
drain off the rice and add to the cooker.
mix gently without breaking the rice.
cover and pressure cook for 2 whistles.
once the pressure is releases, fluff the rice gently without breaking the rice.
finally, enjoy biryani pulao recipe with raita, garnished with coriander leaves.
