Ingredients

  • cup basmati rice
  • 2 tbsp ghee
  • 2 tbsp oil
  • 1 tsp cumin
  • 1 bay leaf
  • ½ tsp pepper
  • ½ tsp cloves
  • 1 inch cinnamon
  • 1 javitri
  • 2 onion sliced
  • 1 ginger garlic paste
  • 1 chilli chopped
  • 1 carrot chopped
  • 1 potato cubed
  • 5 beans chopped
  • 3 tbsp peas
  • ½ capsicum cubed
  • 1 tomato chopped
  • ¾ cup curd
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 2 tsp biryani masala
  • 1 tsp salt
  • 2 tbsp coriander chopped
  • 2 tbsp mint chopped
  • cup water

Instructions

  • firstly, soak 1½ cup basmati rice for 20 minutes.
  • in a pressure cooker, heat 2 tbsp ghee and 2 tbsp oil.
  • add 1 tsp cumin, 1 bay leaf, ½ tsp pepper, ½ tsp cloves, 1 inch cinnamon and 1 javitri.
  • saute until the spices turn aromatic.
  • further add 2 onion, 1 ginger garlic paste and 1 chilli.
  • saute until the onions turn golden brown.
  • also add 1 carrot, 1 potato, 5 beans, 3 tbsp peas, ½ capsicum and 1 tomato.
  • saute for 2 minutes or until the vegetables shrink slightly.
  • keeping the flame on low add ¾ cup curd and mix well.
  • add ½ tsp turmeric, 1 tsp chilli powder, 2 tsp biryani masala, 1 tsp salt, 2 tbsp coriander and 2 tbsp mint.
  • saute on low flame until the spices turn aromatic.
  • further, add 2½ cup water and get to a boil.
  • drain off the rice and add to the cooker.
  • mix gently without breaking the rice.
  • cover and pressure cook for 2 whistles.
  • once the pressure is releases, fluff the rice gently without breaking the rice.
  • finally, enjoy biryani pulao recipe with raita, garnished with coriander leaves.
