firstly, in a bowl take ¾ cup ragi flour and 1 cup water.
mix well making sure there are no lumps.
in a pan take 4 cup of water and get to a boil.
add in the prepared ragi mixture and stir well.
continue to stir until the mixture turns glossy.
cook until the mixture thickens and holds the shape.
cool it completely, and make small balls out of it.
drop into water, cover, and allow to ferment for 8 hours.
after 8 hours of fermenting, squeeze and mix until everything is well combined.
whisk well making sure there are no lumps.
add in 1 cup curd, ¾ tsp salt and mix well.
also add ½ tsp cumin powder, ½ onion, 2 chillies, 3 tbsp coriander. mix well.
finally, enjoy ragi java topped with onions and coriander.
