firstly, in a large bowl take 2 cup wheat flour, ½ tsp salt and mix well.
add water slowly and start to knead the dough.
knead to smooth and soft dough.
now pinch a ball-sized dough and stuff it into chakli maker. make sure to take small holes mould.
now take water, 1 tsp salt and 1 tsp oil. get the water to a rolling boil.
press the atta noodles into the boiling water.
stir gently, making sure the noodles don't break.
now boil for 5 minutes or until the noodles turn glossy.
drain off and rinse with cold water. wheat noodles are ready. keep aside.
how to make hakka noodles:
firstly, in a large wok heat 2 tbsp oil. add 3 cloves garlic, 2 chilli and 2 tbsp spring onion. stir fry on high flame.
now add ½ onion, ½ carrot, 5 beans and ½ capsicum. stir fry until the vegetables turn crunchy.
further add 2 tbsp tomato sauce, 1 tsp schezwan sauce, 2 tbsp vinegar, 2 tbsp soy sauce, 1 tsp chilli sauce, ½ tsp salt and ½ cup cabbage.
stir fry until the sauces are well combined.
add in prepared wheat noodles and mix well.
finally, enjoy hakka noodles prepared with homemade wheat noodles.
