firstly, in a bowl soak 8 dried red chilli in hot water for 30 minutes.
after the chilli has soaked well, grind it to a smooth paste adding water as required. keep aside.
in a large kadai heat water and add 1 tbsp salt.
once the water comes to a boil, add 300 grams of spaghetti.
boil for 5 minutes or until the spaghetti is cooked well. make sure to check the package instruction to know the cooking time.
drain off the pasta and keep it aside.
in a large wok heat 2 tbsp oil and 1 tsp butter.
add 8 cloves garlic and fry to golden brown.
now add 2 tbsp spring onion, 1 dried red chilli and fry until it turns aromatic.
add in prepared chilli paste and cook until the oil separates from the sides.
further add 1 carrot, ½ capsicum and stir fry until the vegetables turn crunchy.
also add 2 tbsp tomato sauce, 2 tbsp soy sauce and ½ tsp salt.
mix well making sure all the sauces are well combined.
add in boiled pasta and 3 tbsp of water used to boil pasta.
mix well coating the spaghetti well with the sauce.
