firstly, prepare masala paste by taking ½ cup coconut, 15 whole cashew, 1 tsp putani and 2 whole green chilli.
also add ½ tsp fennel, 1 tsp coriander seeds, 2 tsp poppy seeds and handful coriander leaves.
blend to a smooth paste adding ½ cup water or as required. keep aside.
to prepare kurma, heat a kadai with 3 tsp oil and saute spices.
also, saute 1 onion followed by 1 tsp ginger garlic paste.
additionally, add 1 cup tomato, and saute till they turn soft and mushy.
add squeezed soya and ½ tsp salt.
saute for a minute or till soya combines well with the masala.
now add the prepared masala paste and mix well.
add ½ cup water or more adjusting consistency as required.
cover and simmer for 10 minutes or till masala get cooked completely.
finally, serve soya chunks kurma with rice or chapathi.
