Ingredients

for masala powder:

  • 1 tsp oil
  • 2 tbsp peanuts roasted
  • 1 tsp urad dal
  • 1 tsp chana dal
  • ½ tsp cumin / jeera
  • 1 tsp sesame / til
  • 3 dried kashmiri red chilli
  • 2 tbsp coconut grated

other ingredients:

  • 2 tsp oil
  • 1 tsp mustard / rai
  • few curry leaves
  • 2 tbsp peanuts
  • 2 cup cooked rice
  • ½ tsp salt

Instructions

  • firstly, in pan heat 1 tsp oil and roast 2 tbsp peanuts, 1 tsp urad dal, 1 tsp chana dal, ½ tsp cumin, 1 tsp sesame and 3 dried red chilli.
  • roast on low flame till the spices turn aromatic.
  • now add 2 tbsp coconut and roast for a minute.
  • cool the spices completely, and blend to fine powder without adding any water. keep aside.
  • now in a large kadai heat 2 tsp oil and splutter 1 tsp mustard, few curry leaves.
  • also saute 2 tbsp peanuts till they turn crunchy.
  • now add 2 cups of cooked rice along with prepared masala powder and ½ tsp salt.
  • mix well without breaking rice grains.
  • cover and simmer for 5 minutes or till rice absorbs flavour completely.
  • finally, serve peanut rice with raita or pack in your lunch box.
