firstly, in pan heat 1 tsp oil and roast 2 tbsp peanuts, 1 tsp urad dal, 1 tsp chana dal, ½ tsp cumin, 1 tsp sesame and 3 dried red chilli.
roast on low flame till the spices turn aromatic.
now add 2 tbsp coconut and roast for a minute.
cool the spices completely, and blend to fine powder without adding any water. keep aside.
now in a large kadai heat 2 tsp oil and splutter 1 tsp mustard, few curry leaves.
also saute 2 tbsp peanuts till they turn crunchy.
now add 2 cups of cooked rice along with prepared masala powder and ½ tsp salt.
mix well without breaking rice grains.
cover and simmer for 5 minutes or till rice absorbs flavour completely.
finally, serve peanut rice with raita or pack in your lunch box.
