Ingredients

for masala paste:

  • 1 tsp oil
  • 1 tsp coriander seeds
  • ½ tsp urad dal
  • ½ tsp chana dal
  • 5 whole dried kashmiri red chilli
  • ¼ tsp methi / fenugreek seeds
  • few curry leaves
  • 2 tbsp coconut fresh / desiccated
  • water as required to blend

for sambar rice:

  • 2 tbsp ghee / clarified butter
  • ½ tsp mustard seeds
  • ½ tsp jeera / cumin seeds
  • pinch of hing / asafoetida
  • few curry leaves
  • 1 whole dried kashmiri red chilli
  • ½ onion petals
  • ½ to mato finely chopped
  • 1 carrot thin strips
  • 5 beans chopped
  • 1 drumstick chopped
  • 1 cup water or as required
  • ½ tsp turmeric / haldi
  • salt to taste
  • ¼ cup tamarind pulp
  • ½ tsp jaggery
  • 2 cup rice cooked
  • ½ cup toor dal cooked

Instructions

  • firstly, heat a pan with some oil. and saute all ingredients listed for masala.
  • add in required water, and blend to smooth paste. keep aside.
  • further, in a kadai heat 2 tbsp ghee and add tempering ingredients.
  • further add onion petals and saute for a minute.
  • also add tomatoes and saute.
  • now add chopped vegetables, water, turmeric and salt.
  • cover and boil the vegetables for 5 minutes.
  • furthermore, add cup tamarind pulp and jaggery. boil well.
  • add in prepared masala paste, cooked toor dal and cooked rice.
  • mix all the ingredients well and adjust consistency by adding water if required.
  • simmer for 5 minutes or till the sambar rice thickens slightly.
  • finally, serve sambar rice / sambar sadam topped with some fresh ghee and chips.
