Ingredients

for pressure cooking:

  • 2 cup peas soaked overnight
  • 1 potato roughly chopped
  • 1 carrot chopped
  • 2 cups water
  • salt to taste
  • ½ tsp turmeric / haldi

for masala paste:

  • 3 tsp oil
  • ½ onion roughly chopped
  • 2 green chili slit lengthwise
  • 2 cloves garlic / lasun roughly chopped
  • 1 inch ginger roughly chopped
  • 1 large tomato roughly chopped

other ingredients:

  • 2 cups water add as required
  • 1 tsp kashmiri red chili powder / lal mirch powder
  • ½ tsp turmeric / haldi
  • 2 tsp pav bhaji masala powder
  • ¾ tsp aamchur powder / dry mango powder
  • ½ tsp garam masala powder
  • salt to taste
  • ½ tsp fennel powder / saunf powder
  • ½ tsp jaggery

for 1 plate serving:

  • 10-15 flat puri / papdi
  • 2 tbsp sweet tamarind chutney
  • 2 tbsp onion finely chopped
  • 1 tsp coriander leaves finely chopped
  • 2 tbsp tomato finely chopped
  • pinch of kashmiri red chili powder / lal mirch powder
  • fistful of sev

Instructions

  • firstly, pressure cook peas, potato, carrot for 3 whistles along with water, salt and turmeric.
  • mash out the vegetables and keep aside.
  • further, prepare the masala paste by heating up oil.
  • saute onions, garlic, ginger and chili.
  • further add tomatoes and saute.
  • cool and blend to smooth paste and pour into kadai.
  • also add pressure cooked vegetables.
  • further add water and all spices listed above.
  • mix well, cover and simmer for 20 mins.
  • crush out the puris and place it in a plate.
  • pour the masala gravy over puri.
  • add in sweet tamarind chutney, onions and tomato.
  • also sprinkle chaat masala and chili powder.
  • finally, serve masala puri chaat garnished with sev and coriander leaves.
