Ingredients

  • 1 tbsp ghee / clarified butter
  • 10 cashews half
  • ¾ tsp ginger-garlic paste
  • 1 cup basmati rice soaked for 30 minutes
  • ½ cup milk
  • 2 cups water
  • salt to taste

spices:

  • 20 black pepper
  • 1 bay leaf / tej patta
  • 5 cloves
  • 2 cardamom / elachi
  • 1 inch cinnamon stick
  • 1 star anise

vegetables:

  • ½ onion finely chopped
  • 2 green chillis slit lengthwise
  • 1 carrot chopped
  • 5 beans chopped
  • ¼ cup cauliflower florets
  • ¼ cup peas fresh / frozen

Instructions

  • firstly, take a cooker and melt ghee.
  • furthermore, add all spices.
  • also add cashews and fry on medium flame till cashews turn golden brown.
  • now add finely chopped onions.
  • also add a tsp of ginger-garlic paste. saute till raw aroma is gone.
  • then add slit green chillis.
  • additionally, add all vegetables of your choice.
  • saute them for couple of minutes.
  • then add basmati rice soaked in water for 30 minutes.
  • saute them gently for a minute without breaking rice grains.
  • then add half cup milk.
  • also add 2 cups water.
  • add salt as required and give a final mix.
  • furthermore, pressure cook for 2 whistles on medium flame.
  • allow the pressure to release by itself.
  • finally, serve veg pulao with onion-tomato raita.
