firstly, in a pan, heat 1 tbsp oil. add 1 tsp mustard seeds, 1 tsp urad dal and 2 dried red chilli. wait till the mustard seeds crackle.
now add few cashews / groundnut and curry leaves.
add finely chopped onions. saute till they turn pinkish.
then add chopped chillies, carrots, beans.
also add green peas and cook for a minute or two.
then add the roasted oats. stir lightly.
add salt, sugar, turmeric powder as required.
then sprinkle 1 to 2 cups of water slowly.
on a low flame, steam the oats upma covering with a lid for 5 to 6 minutes.
furthermore, add chopped coriander leaves and squeeze some lemon juice.
finally, oats upma is ready.
