Ingredients

for masala paste:

  • ½ bunch coriander
  • few mint
  • 5 chilli
  • 1 inch ginger
  • 7 cloves garlic
  • 1 inch cinnamon
  • 1 black cardamom
  • 5 pods cardamom
  • 6 cloves
  • ½ tsp pepper

for pulao:

  • 2 tbsp ghee
  • 1 tsp cumin
  • 1 onion sliced
  • ½ capsicum chopped
  • 1 potato chopped
  • 1 carrot chopped
  • 5 beans chopped
  • 4 tbsp peas
  • 3 cup water
  • 2 tsp salt
  • cup basmari rice soaked 20 minutes
  • 2 tsp lemon juice

Instructions

  • Firstly, to prepare the masala paste. In a mixer jar take ½ bunch coriander, few mint, 5 chilli, 1 inch ginger and 7 cloves garlic.
  • Also add 1 inch cinnamon, 1 black cardamom, 5 pods cardamom, 6 cloves and ½ tsp pepper.
  • Add water as required and grind to a smooth paste. Keep aside.
  • In a large kadai, heat 2 tbsp ghee. Add 1 tsp cumin, 1 onion and saute well.
  • Also add ½ capsicum, 1 potato, 1 carrot, 5 beans, and 4 tbsp peas.
  • Stir fry till the vegetables turn crunchy.
  • Further, add prepared masala paste and cook well.
  • Now add 3 cup water, 2 tsp salt and mix well.
  • Once the water comes to a boil, add 1½ cup basmati rice, 2 tsp lemon juice and mix well.
  • Cover and simmer for 20 minutes or until the rice is cooked well.
  • Fluff the rice gently without breaking the rice grains.
  • Finally, enjoy Coriander Rice Recipe / Cilantro Rice with raita.
