Ingredients

  • ½ cup suji / rava / semolina fine
  • ½ cup besan / gram flour
  • ¼ tsp turmeric
  • ¾ tsp salt
  • cup water
  • 2 tsp oil
  • ¼ tsp ajwain / carom seeds
  • pinch hing / asafoetida
  • ½ onion finely chopped
  • few curry leaves chopped
  • 2 chilli finely chopped
  • ½ tsp ginger paste
  • 2 tbsp coriander finely chopped
  • 1 tsp lemon juice
  • oil for frying

Instructions

  • firstly, in a large bowl take ½ cup suji, ½ cup besan, ¼ tsp turmeric and ¾ tsp salt.
  • add 1½ cup water and mix using a whisk.
  • prepare a smooth lump free batter.
  • now in a large kadai heat 2 tsp oil and saute ¼ tsp ajwain and pinch hing.
  • pour in prepared suji besan batter and mix well.
  • stir continuously until the mixture thickens.
  • continue to stir until the mixture holds shape and starts to separate from the pan.
  • transfer the dough into a large mixing bowl and allow to cool slightly.
  • further add ½ onion, few curry leaves, 2 chilli, ½ tsp ginger paste, 2 tbsp coriander and 1 tsp lemon juice.
  • mix well forming a soft dough.
  • now grease hand with oil and prepare small ball sized.
  • deep fry in hot oil stirring occasionally. or preheat and bake at 180 degree celcius for 25 minutes.
  • fry until the pakora turns golden and crisp.
  • finally, enjoy suji besan cutlet / suji besan balls with tomato sauce.
