firstly, in a pan heat 1 tbsp oil and saute 1 inch ginger and 2 clove garlic.
add ½ onion and saute until it softens.
further add 1 tomato and saute until it turns soft and mushy.
now add ½ coconut, 3 dried red chilli, 1 tsp coriander seeds, 1 tsp poppy seeds, 1 tsp fennel and 1 tbsp putani.
saute for a minute until it turns aromatic.
cool completely and transfer to the blender.
blend to smooth paste adding ½ cup water. keep aside.
now in a large kadai heat 2 tbsp oil and saute ½ inch cinnamon, 3 pod cardamom, few curry leaves.
add ½ onion, 1 chilli and saute until it softens slightly.
further add ½ tomato and saute until it turns soft and mushy.
add in prepared masala paste, ¼ tsp turmeric and ¾ tsp salt.
saute for 2 minutes or until masala turns aromatic.
now add 3 cup water or as required adjusting the consistency.
simmer and boil for 5 minutes.
also add 2 tbsp coriander and mix well.
finally, enjoy dosa kurma recipe with dosa, idli or chapathi.
