firstly, in a large kadai heat 2 tbsp oil and splutter 1 tsp mustard, 1 tsp cumin, few curry leaves.
add 1 onion, 1 chilli and saute until onions turn golden brown.
now add 2 cup brinjal and saute for a minute.
also, add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp garam masala and 1 tsp salt.
saute on low flame until spices turn aromatic.
further add 2 tomato and saute until everything is well combined.
cover and cook for 5 minutes, or until tomato turn soft and mushy.
now add 1 cup water and mix well adjusting consistency as required.
cover and simmer for 10 minutes or until everything is well cooked.
finally, add 2 tbsp coriander and enjoy brinjal tomato curry with chapathi.
