firstly, in a large bowl take 1½ cup maida, ¼ tsp baking soda, pinch hing and ¾ tsp salt.
mix well making sure everything is well combined.
now add 1 cup buttermilk. you can alternatively use curd.
mix well with your hand in one direction.
beat the batter making sure to incorporate air well.
now add 2 tbsp curry leaves, 2 chilli, 1 inch ginger and 2 tbsp coconut.
mix well making sure everything is well combined.
cover and rest for 3 hours for best results.
after 3 hours, mix the batter again.
now dip your hand in cold water and pinch a small ball sized batter.
drop it in hot oil keeping the flame on medium.
stir and fry uniformly on medium flame.
drain off the goli baje once it turns golden brown and crisp.
finally, goli baje is ready to enjoy with coconut chutney.
