Ingredients

  • cup maida / plain flour
  • ¼ tsp baking soda
  • pinch hing / asafoetida
  • ¾ tsp salt
  • 1 cup buttermilk
  • 2 tbsp curry leaves finely chopped
  • 2 chilli finely chopped
  • 1 inch ginger finely chopped
  • 2 tbsp coconut chopped
  • oil for frying

Instructions

  • firstly, in a large bowl take 1½ cup maida, ¼ tsp baking soda, pinch hing and ¾ tsp salt.
  • mix well making sure everything is well combined.
  • now add 1 cup buttermilk. you can alternatively use curd.
  • mix well with your hand in one direction.
  • beat the batter making sure to incorporate air well.
  • now add 2 tbsp curry leaves, 2 chilli, 1 inch ginger and 2 tbsp coconut.
  • mix well making sure everything is well combined.
  • cover and rest for 3 hours for best results.
  • after 3 hours, mix the batter again.
  • now dip your hand in cold water and pinch a small ball sized batter.
  • drop it in hot oil keeping the flame on medium.
  • stir and fry uniformly on medium flame.
  • drain off the goli baje once it turns golden brown and crisp.
  • finally, goli baje is ready to enjoy with coconut chutney.
