Ingredients

for suji batter:

  • 1 cup rava / semolina / suji coarse
  • ½ cup curd
  • ½ tsp salt
  • ¾ cup water
  • ½ carrot finely chopped
  • 2 tbsp sweet corn
  • ½ capsicum finely chopped
  • 5 beans finely chopped
  • 3 tbsp onion finely chopped
  • 2 tbsp coriander finely chopped
  • ½ tsp chilli flakes

for roasting:

  • ½ tsp eno / fruit salt
  • 2 tsp oil
  • 1 tsp butter
  • 2 tbsp coriander finely chopped

Instructions

  • firstly, in a large bowl take 1 cup rava, ½ cup curd and ½ tsp salt.
  • mix well making sure everything is well combined.
  • now add ¾ cup water and mix forming a lump free batter.
  • rest the batter for 10 minutes.
  • further add ½ carrot, 2 tbsp sweet corn, ½ capsicum, 5 beans, 3 tbsp onion, 2 tbsp coriander and ½ tsp chilli flakes.
  • mix well forming a smooth batter.
  • now heat a pan and spread 2 tsp oil.
  • once the pan is hot, add ½ tsp eno fruit salt, 2 tbsp water to the batter and mix gently.
  • once the batter turns frothy, pour onto the hot pan.
  • cover and simmer for 2 minutes or until the base are cooked well.
  • now flip over and press gently.
  • make a good slit in the centre and 1 tsp butter, 2 tbsp coriander in the centre.
  • simmer for a minute or until the is cooked completely.
  • finally, enjoy rava omelette or suji ka nasta with tomato sauce.
