firstly, in a large bowl take 1 cup besan, 1 cup rava, 1 tsp chilli flakes, ½ tsp ginger paste, ¼ tsp turmeric and ½ tsp salt.
add ½ cup curd and mix well.
now add water as required and form a smooth lump-free batter.
rest the batter for 10 minutes so that rava absorbs the water well.
further, add 2 potato, 1 carrot, 2 tbsp coriander and mix well.
scoop out 2 ladlefuls of batter in a small bowl and add ¼ tsp eno fruit salt.
mix gently forming a frothy batter. keep aside.
in a pan heat 2 tbsp oil, add ½ tsp mustard, ½ tsp cumin, 1 tsp sesame, few curry leaves and pinch hing.
splutter the tempering and spread the tempering uniformly.
now pour in the batter and spread uniformly.
sprinkle, pinch chilli powder, cover and simmer for 3 minutes or until the base is cooked well.
flip over gently, and cook for another 2 minutes or until both sides are cooked well.
finally, enjoy aloo aur besan ka nasta with tomato sauce.
