firstly, in a large bowl take 2 cup maida and 2 tbsp rava.
add ½ tsp ajwain, 1 tsp cumin and ½ tsp salt. mix well.
now pour 2 tbsp hot oil and mix well.
crumble and mix until the flour turns moist.
further, add water and start to knead.
knead to a smooth and soft dough adding water if required.
now roll the dough by greasing oil to the rolling pin.
roll to slightly thick thickness.
using a bottle cap make a moon-like shape.
now deep fry in hot oil, keeping the flame on low.
stir occasionally, and fry until the namak pare turns golden and crunchy.
drain off to remove excess oil.
now add ½ tsp chilli powder, ¼ tsp pepper powder, ½ tsp chaat masala, ¼ tsp salt and few curry leaves.
mix well making sure the spices are well coated.
finally, enjoy kaju namak para with a cup of chai.
