firstly, in a mixi jar take 2 cup pineapple and 1 cup juice.
blend smooth making sure the chunks are ground well.
now strain the juice extracting the pineapple juice. you can alternatively take 3 cup pineapple juice here.
now add 1 cup cornflour to the pineapple juice and mix using a whisk.
further, add 1 cup water and prepare a smooth consistency batter. keep aside.
in a large kadai take 2 cup sugar and 1 cup water.
stir well until the sugar dissolves and comes to a boil.
once the sugar syrup comes to a boil, add prepared pineapple mixture.
keep stirring continuously, keeping the flame on low to medium.
after 5 minutes, the mixture will start to thicken.
add ½ tsp yellow food colour and give a good mix. food colour is optional, it makes the delight attractive.
now add 2 tbsp ghee and continue to cook.
the ghee is absorbed completely.
further, add 2 tbsp more ghee and continue to cook. i have used a total of 6 tbsp of ghee in batches.
keep stirring until the mixture will start to hold shape and separate the pan.
also, add ¼ tsp cardamom powder and 2 tbsp nuts. mix well.
transfer the mixture to a box lined with parchment paper and topped with nuts.
level up making sure it is of uniform thickness.
rest for 2 hours or until the dessert is set well.
cut into the shape of your choice and garnish with chopped nuts.
finally, enjoy pineapple delight or pineapple halwa topped with more nuts.
