firstly, in a large bowl take 2 cup rice flour and ¼ cup rava. adding rava is optional, it helps to make rotti slightly soft.
add 1 cup green papaya, 1 onion, ½ carrot, 2 chilli, few curry leaves, 2 tbsp coriander and 1 tsp ginger paste.
also add 1 tsp cumin, ½ tsp salt and mix well. squeeze and mix making sure everything is well combined.
now slowly add water in batches and start to make a dough.
add water as required to form a smooth and soft dough.
you can make rotti on a banana leaf, baking paper or on a wet cloth.
to make on a wet cloth, place a ball sized dough and tap gently to a thin thickness.
now flip over to hot tawa and press gently.
after a minute, peel the cloth off.
flip over once the base is cooked.
now add oil and roast both sides until it turns slightly golden.
finally, enjoy papaya rotti with chutney.
