firstly, in a mixer jar take 1 cup coriander, 8 cashew, ½ cup coconut, 1 inch cinnamon, 3 pods cardamom, ½ tsp pepper, ½ tsp cloves, 1 tsp fennel and 2 chilli.
add ½ cup water and blend to a smooth paste. keep aside.
in a large kadai, heat 2 tbsp oil. splutter 1 tsp mustard and few curry leaves.
add 1 onion, 1 tsp ginger paste and saute slightly.
also add 1 potato, ½ carrot, 2 tbsp peas, ½ capsicum, 5 beans and 1 tsp salt.
saute until the vegetables are cooked slightly.
further, add the prepared masala paste and saute slightly.
pour 3 cup water and mix well adjusting the consistency as required.
cover and cook for 8 minutes or until the flavours are absorbed well.
finally, add ½ lemon juice and enjoy veg kurma with instant set dosa.
