firstly, in a large pan heat 2 tbsp oil, add 1 tsp mustard, ½ tsp urad dal, ½ tsp chana dal, ½ tsp cumin, pinch hing and few curry leaves. splutter the tempering.
add 3 chilli, 1 inch ginger, 1 onion and saute until the onions soften slightly.
further, add ½ tsp turmeric, ½ tsp salt. saute on low flame until the spices turn aromatic.
further, add 4 potato and mix well.
mash and mix add ¼ cup water forming a smooth texture.
also, add 2 tbsp coriander and ½ lemon. mix well.
finally, aloo bhaji is ready to stuff into masala dosa.
