firstly, to knead the dough, in a large bowl take 2½ cup wheat flour, ½ tsp salt, 1 tsp chilli flakes and 2 tsp oil. mix well making sure everything is well combined.
add water as required and knead the dough.
knead to a smooth and soft dough.
grease the dough with oil, cover and rest for 10 minutes.
meanwhile, to prepare the onion stuffing, in a large bowl take 2 onion.
add 1 tsp chilli powder, ¼ tsp turmeric, ½ tsp coriander powder, ½ tsp cumin powder, 1 tsp aamchur, ¼ tsp ajwain and 3 tbsp coriander.
also, add ½ tsp salt and mix well making sure everything is well combined.
after the dough has rested for 10 minutes, knead it slightly.
pinch a large ball sized dough and roll uniformly. roll as thin as possible, dusting wheat flour as required.
now top with masaledar onion stuffing and spread uniformly.
roll tight making sure the masala is intact.
now roll spiral and flatten gently.
dust with wheat flour and roll gently.
now on a hot tawa place the rolled paratha and cook for a minute.
furthermore, when the base is partly cooked, flip the paratha
also, spread ½ tsp oil / ghee and cook both sides.
crush the paratha slightly before serving.
finally, enjoy masaledar onion paratha with raita and pickle
