Firstly, in a wok, heat 2 tbsp butter. Saute 3 cloves garlic and 1 inch ginger.
Also, sauté ½ onion until it softens.
Now add 15 sliced mushroom and saute well.
Cook till the mushroom softens and water is released.
Now add 1½ tbsp maida, 1 tsp salt and cook till it turns aromatic. Maida helps to thicken the soup.
Pour in 4 cup water and mix well.
Collect few mushroom and grind to a smooth paste. Mushroom paste helps to make mushroom soup creamy and flavourful.
Add in mushroom paste and cook well.
Simmer for atleast 5 minutes, or until the flavours are absorbed well.
Now add ½ tsp thyme, 1 tsp pepper powder and ¼ cup cream. Mix and get to a boil.
Also add 2 tsp coriander and mix well.
