Ingredients

  • 4 tbsp oil
  • ¾ tsp mustard seeds
  • ½ tsp urad dal
  • ½ tsp chana dal
  • 1 dried red chilli
  • few curry leaves
  • 1 green chilli slit lengthwise
  • 15-20 pieces of brinjal / eggplant 1 inch pieces
  • 3 tsp groundnuts
  • ¼-½ cup tamarind extract
  • 2 tbsp vangi bhath masala powder
  • small piece of jaggery
  • salt to taste
  • ¼ tsp turmeric powder
  • 1 bowl cooked rice
  • few coriander leaves finely chopped

Instructions

  • firstly, in a large kadai, take 4 tbsp of oil.
  • furthermore, add the tempering ingredients like mustard seeds, urad dal, chana dal, red chilli and curry leaves.
  • allow them to splutter. and then add green chilli.
  • after that, add chopped brinjal. to avoid de-colouration and to remove the bitterness, soak brinjals in water.
  • also add groundnuts.
  • saute and fry them till they shrink in size.
  • furthermore, add tamarind juice.
  • also add 2 tsp of vangi bhath masala, jaggery, salt and turmeric powder.
  • give a good mix and cook till the tamarind water is evapoartaed.
  • furthermore, add cooked rice and gently mix the rice with the masala.
  • also add few coriander leaves.
  • finally, serve vangi bhath with raita.
