Ingredients

dal's used :

  • moong dal - 2 tbsp
  • masoor dal - 2 tbsp
  • toor dal - 2 tbsp
  • chana dal - 2 tbsp
  • black urad dal - 2 tbsp

for masala:

  • 1 medium sized onion finely chopped
  • 1 medium sized tomato finely chopped
  • 2-3 dry red chilies
  • 10-12 curry leaves / kadi patta
  • 2 tsp ginger - garlic paste
  • ½ tsp black mustard seeds/rai
  • 1 tsp cumin seeds / jeera
  • 1 to 2 pinches of asafoetida powder / hing optional
  • ½ tsp turmeric powder / haldi
  • ½ - 1 tsp red chili powder / lal mirch powder
  • 1 tsp coriander powder optional
  • 1 tsp kasuri methi / dry fenugreek leaves
  • ½ tsp garam masala powder
  • 2-3 tbsp oil or ghee or unsalted butter
  • 1 or 2 tbsp chopped coriander leaves / dhania patta
  • salt as required

Instructions

  • combine all the 5 dals in equal proportion and soak in water for 30-45 mins.
  • pressure cook the dals adding 3 cups of water for 4-5 whistles.
  • in a pan heat ghee and add the mustard, cumin and fry them. let them splutter.
  • add the onions and fry till they become transparent or light brown.
  • now add ginger - garlic paste and fry until the raw smell disappears.
  • add red chillies, curry leaves and stir.
  • now it is time to add the tomatoes. cook till they soften and you see oil releasing from the sides.
  • add all the spice powders - turmeric powder, red chili powder, coriander powder. and fry for a minute.
  • now add the cooked and mashed dal. stir well.
  • add water and salt to taste.
  • continue to stir and cook the the dal for 4-5 minutes in a low to medium flame.
  • finally, add the crushed kasoori methi and garam masala.
  • add chopped coriander leaves.
  • your panchamel dal is ready. serve with choice of rotis or rice recipes.
