Ingredients

for blanching:

  • 30 florets gobi / cauliflower
  • 1 tsp salt
  • 3 cup hot water

for batter:

  • ½ cup maida / plain flour
  • 2 tbsp corn flour
  • ½ tsp kashmiri red chilli powder
  • ½ tsp ginger garlic paste
  • ½ tsp salt
  • ½ cup water
  • oil for frying

for fried rice:

  • 4 tsp oil
  • 3 clove garlic finely chopped
  • 1 chilli slit
  • ½ onion finely chopped
  • 4 tbsp spring onion chopped
  • ½ carrot chopped
  • 4 beans chopped
  • ½ capsicum chopped
  • 1 tbsp vinegar
  • 1 tbsp soy sauce
  • 4 cup cooked basmati rice
  • 1 tsp pepper crushed
  • ½ tsp salt

Instructions

  • firstly, take 4 tsp oil and saute 3 clove garlic, 1 chilli.
  • now add ½ onion and 2 tbsp spring onion. saute on high flame.
  • further add ½ carrot, 4 beans and ½ capsicum. stir fry.
  • make a gap in the centre and add 1 tbsp vinegar and 1 tbsp soy sauce.
  • stir fry on high flame.
  • add in fried gobi and mix gently coating sauces well.
  • further add cooked rice, 1 tsp pepper and ½ tsp salt and mix gently.
  • finally, add 2 tbsp spring onion and enjoy gobi fried rice.
