firstly, in a large bowl take 2 cup maida, ½ tsp ajwain, ½ tsp salt and ¼ cup ghee.
crumble and mix well until the flour turns moist.
now add ½ cup water and start to knead the dough.
knead to a tight dough adding water as required.
cover and rest for 20 minutes.
to prepare the stuffing, in a pan heat 2 tsp oil. add 1 tsp cumin, pinch hing, 2 chilli and 1 inch ginger.
saute until the spices turn aromatic.
keeping the flame on low, add ½ tsp chilli powder, ½ tsp coriander powder, ½ tsp cumin powder, ½ tsp garam masala, 1 tsp aamchur and ¼ tsp pepper powder.
saute on low flame until the spices turn aromatic.
further add 3 potato, ½ cup peas and ½ tsp salt.
mix well making sure everything is well combined.
add 2 tbsp coriander and mix well. potato stuffing is ready for samosa.
to prepare the puff samosa, knead the dough again.
roll the dough to a slightly thick thickness.
now cut into pieces.
place a tsp of prepared aloo stuffing in the centre.
cover with another piece of the pastry sheet and stick using some water over the sides.
deep fry in medium hot oil.
stir on medium flame until the puff samosa turns golden brown and crispy.
finally, enjoy puff samosa or samosa bites with chutney.
