Ingredients

for dough:

  • 2 cup maida
  • ½ tsp ajwain
  • ½ tsp salt
  • ¼ cup ghee
  • ½ cup water for kneading
  • oil for frying

for aloo stuffing:

  • 2 tsp oil
  • 1 tsp cumin
  • pinch hing
  • 2 chilli finely chopped
  • 1 inch ginger finely chopped
  • ½ tsp chilli powder
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • 1 tsp aamchur
  • ¼ tsp pepper powder
  • 3 potato boiled & mashed
  • ½ cup peas
  • ½ tsp salt
  • 2 tbsp coriander chopped

Instructions

  • firstly, in a large bowl take 2 cup maida, ½ tsp ajwain, ½ tsp salt and ¼ cup ghee.
  • crumble and mix well until the flour turns moist.
  • now add ½ cup water and start to knead the dough.
  • knead to a tight dough adding water as required.
  • cover and rest for 20 minutes.
  • to prepare the stuffing, in a pan heat 2 tsp oil. add 1 tsp cumin, pinch hing, 2 chilli and 1 inch ginger.
  • saute until the spices turn aromatic.
  • keeping the flame on low, add ½ tsp chilli powder, ½ tsp coriander powder, ½ tsp cumin powder, ½ tsp garam masala, 1 tsp aamchur and ¼ tsp pepper powder.
  • saute on low flame until the spices turn aromatic.
  • further add 3 potato, ½ cup peas and ½ tsp salt.
  • mix well making sure everything is well combined.
  • add 2 tbsp coriander and mix well. potato stuffing is ready for samosa.
  • to prepare the puff samosa, knead the dough again.
  • roll the dough to a slightly thick thickness.
  • now cut into pieces.
  • place a tsp of prepared aloo stuffing in the centre.
  • cover with another piece of the pastry sheet and stick using some water over the sides.
  • deep fry in medium hot oil.
  • stir on medium flame until the puff samosa turns golden brown and crispy.
  • finally, enjoy puff samosa or samosa bites with chutney.
