when i was in india, i use to buy store bought garam masala recipe and i was quite happy with it. however, after i moved to australia, i wasn’t that satisfied with store bought one. hence i started to prepare my own masala powder recipe and store it in air tight container. typically this masala remains so aromatic for months if stored at a dry place. i even prepare this masala in bulk and share with my friends and trust me they are really happy with it. i often dry roast the whole spices and then grind together. but some even grind them separately and then mix it together.

furthermore, the recipe of this spice powder is open ended recipe and the addition of spices can be varied. in this recipe i have added the most common whole spices which are easily available in market. however, this recipe can be easily extended by adding other spices like dry ginger powder, rose leaves, mace, black cardamom. some even add asafoetida, chili, stone flower while grounding. but make sure not to add more than a tsp of each spices otherwise single flavour may over power.

easy homemade garam masala

Ingredients (1 cup = 250 ML)
  • ¼ cup coriander seeds / dhaniya
  • 2 tbsp cumin seeds / jeera
  • 1 tsp black pepper / kali mirch
  • 1 flower star anise / chakr phool
  • 10 cloves / lavang
  • 3 inch cinnamon stick / dalchini
  • ½ nutmeg / jaayaphal
  • 13 pods cardamom / elachi
  • 2 tsp fennel / saunf
  • 4-7 bay leaf / tej patta
Instructions
  1. firstly, in a large heavy bottomed pan dry roast coriander seeds. roast on low to medium flame.
  2. transfer to the bowl and allow to cool.
  3. furthermore, dry roast cumin seeds. roast on low to medium flame.
  4. transfer to the same bowl and allow to cool.
  5. also dry roast black pepper, star anise, cloves, cinnamon stick, nutmeg and cardamom.
  6. transfer to the same bowl and allow to cool.
  7. further, dry roast fennel seeds. do not over roast as they will loose flavours.
  8. also roast bay leaf till they turn slightly crisp.
  9. transfer to the bowl and allow to cool completely.
  10. furthermore, once the dried spices are cooled completely transfer to the mixer jar and blend to fine powder.
  11. blend to smooth and fine powder. also sieve if there are too many fibres.
  12. finally, store the garam masala powder in air tight jar and use to prepare curries, dal or sabzis.

how to make homemade garam masala powder with step by step photo recipe:

notes:

  • firstly, you can keep under sunlight instead of dry roasting.
  • furthermore, add mace (gada) for more flavours.
  • also for greater life store garam masala in refrigerator.
  • additionally, do not get in touch of water as the masala will spoil.
  • finally, garam masala will taste great when prepared with fresh and dry spices.

    Have you tried powdering spices in magic bullet or nutribullet? Just wanted to know if it works..my indian mixer went bad.
