firstly, in a pan heat 2 tbsp oil and fry 1 onion until it turns translucent.
once the onion shrinks, keep aside.
in the same oil, add 20 bhindi and fry on medium flame.
fry until the bhindi shrinks and turns non-sticky.
further, add fried onion and cook for a minute. keep aside.
in a large kadai, heat 2 tbsp oil. add 1 tsp cumin and 10 cloves garlic.
saute until the garlic turns golden brown and aromatic.
further, add 2 onion and 1 tsp ginger paste.
saute well until the onions turn golden brown.
keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, ½ tsp cumin powder, 1 tsp garam masala and 1 tsp salt.
saute on low flame until the spices turn aromatic.
now add 2 tomato and saute until the tomato turns soft and mushy.
add in fried onion and bhindi and mix gently.
add 2 tbsp spring onion, 1 tomato. cover and simmer for 5 minutes.
once the flavours are absorbed well. add 2 tbsp coriander and 2 tbsp kasuri methi.
finally, enjoy Bhindi Do Pyaza Recipe with roti or rice.
