Ingredients

for frying bhindi:

  • 2 tbsp oil
  • 1 onion cubed
  • 20 bhindi chopped

for sabzi:

  • 2 tbsp oil
  • 1 tsp cumin
  • 10 cloves garlic finely chopped
  • 2 onion finely chopped
  • 1 tsp ginger paste
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • 1 tsp garam masala
  • 1 tsp salt
  • 2 tomato chopped
  • 2 tbsp spring onion chopped
  • 2 tbsp coriander chopped
  • 2 tbsp kasuri methi crushed

Instructions

  • firstly, in a pan heat 2 tbsp oil and fry 1 onion until it turns translucent.
  • once the onion shrinks, keep aside.
  • in the same oil, add 20 bhindi and fry on medium flame.
  • fry until the bhindi shrinks and turns non-sticky.
  • further, add fried onion and cook for a minute. keep aside.
  • in a large kadai, heat 2 tbsp oil. add 1 tsp cumin and 10 cloves garlic.
  • saute until the garlic turns golden brown and aromatic.
  • further, add 2 onion and 1 tsp ginger paste.
  • saute well until the onions turn golden brown.
  • keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, ½ tsp cumin powder, 1 tsp garam masala and 1 tsp salt.
  • saute on low flame until the spices turn aromatic.
  • now add 2 tomato and saute until the tomato turns soft and mushy.
  • add in fried onion and bhindi and mix gently.
  • add 2 tbsp spring onion, 1 tomato. cover and simmer for 5 minutes.
  • once the flavours are absorbed well. add 2 tbsp coriander and 2 tbsp kasuri methi.
  • finally, enjoy Bhindi Do Pyaza Recipe with roti or rice.
