Firstly, slice 5 onion as thin as possible.
Transfer the onions to the large bowl.
Add 1 tsp salt and squeeze the onions.
Now add 1 tsp chilli powder, 1 tsp fennel, 1 inch ginger, 2 chilli, 2 tbsp coriander and few curry leaves.
Also, add ¼ cup maida and 2 tbsp besan and pinch hing.
Squeeze and mix well making sure everything is well combined.
Add more maida as required, making sure the mixture holds the shape.
Grease the hands with oil and shape them into vada.
Deep fry in hot oil, keeping the flame on medium.
Stir occasionally, and fry on low to medium flame until the vada turns golden brown.
Drain off once the vada turns crispy golden brown.
