Ulli Vada Recipe | Kerala Style Onion Vada with step-by-step photo and video recipe. Pakoda or pakora recipes are a popular snack choice across Indian and is made and served for various reasons. The recipe has basic ingredients yet it can be made with different styles with unique tastes. One such simple yet hugely popular onion-based pakora is the Ulli vada or onion vada from South Indian Cuisine known for its taste.

As I explained earlier, there are several ways a pakora, particularly onion pakoda is made. The traditional or most common way to make this recipe is with just gram flour or besan mixed with spice mix powder. It forms a layered crisp pakoda which is typically served as it is or as a stuffing in between pav. The other common way to make this pakoda is round balls which can be served with a range of sauces or dipped in any curry. However, this recipe for ulli vada is slightly different. It is made with a combination of gram flour, rice flour and shaped like tikki. It may not be crisp or brittle, but certainly a tasty and flavored pakora recipe.

Furthermore, some more additional and essential tips, suggestions, and variants to the ulli vada recipe. Firstly, the quality of onions is essential for this recipe. I typically red Spanish onions for this recipe. But you may use other types of onions like white and brown onions for the same purpose. Secondly, these vada’s are fried in small batches and hence do not overcrowd these. Overcrowding would lead to uneven heat supply and hence may not be cooked thoroughly. Lastly, these vadas have more surface area and hence have more chance of absorbing the oil. Therefore, it is recommended to drain the excess oil before serving using tissue paper. Also, serve these vada hot and not after resting.

Ingredients
  

  • 5 onion, sliced
  • 1 tsp salt
  • 1 tsp chilli powder
  • 1 tsp fennel
  • 1 inch ginger, chopped
  • 2 chilli, chopped
  • 2 tbsp coriander, chopped
  • few curry leaves, chopped
  • ½ cup maida
  • 2 tbsp besan / gram flour
  • pinch hing
  • oil, for frying

Instructions
 

  • Firstly, slice 5 onion as thin as possible.
  • Transfer the onions to the large bowl.
  • Add 1 tsp salt and squeeze the onions.
  • Now add 1 tsp chilli powder, 1 tsp fennel, 1 inch ginger, 2 chilli, 2 tbsp coriander and few curry leaves.
  • Also, add ¼ cup maida and 2 tbsp besan and pinch hing.
  • Squeeze and mix well making sure everything is well combined.
  • Add more maida as required, making sure the mixture holds the shape.
  • Grease the hands with oil and shape them into vada.
  • Deep fry in hot oil, keeping the flame on medium.
  • Stir occasionally, and fry on low to medium flame until the vada turns golden brown.
  • Drain off once the vada turns crispy golden brown.
  • Finally, enjoy Ulli Vada Recipe with tomato sauce.

  • Firstly, make sure to slice the onions thinly, else the vada will not turn crispy from out.
  • Also, adding besan gives slight softness to the vada.
