Firstly, in a large bowl take 2 cup besan, ¼ tsp turmeric, ¼ cup sugar and ½ tsp salt.
Mix well making sure everything is well combined.
Now add 1 cup water and mix well using a whisk.
Add water as required and whisk for 5 minutes.
Prepare a fluffy and light batter.
Cover and rest for 15 minutes.
Now add 2 tbsp lemon juice and 2 tbsp oil.
Continue to whisk for 5 more minutes to get a fluffy batter.
Further, add 1 tsp eno fruit salt and 2 tbsp water.
Mix gently until the batter turns frothy.
Transfer the batter immediately to the greased tray.
Place in a steamer and steam for 20 minutes.
Now cut the dhokla into pieces.
To prepare the tempering, heat 2 tbsp oil. Add 1 tsp mustard, 5 chilli, a few curry leaves, pinch hing, and splutter the tempering.
Further add ½ cup water, 2 tbsp sugar, and ¼ tsp salt.
Mix and boil for 2 minutes, making sure everything is well combined.
Pour the tempering over the dhokla and rest for 20 minutes so that the dhokla absorbs all the water.
Before serving, top with 2 tbsp coriander and 2 tbsp coconut.
