Ingredients

  • 2 cup besan / gram flour
  • ¼ tsp turmeric
  • ¼ cup sugar
  • ½ tsp salt
  • 1 cup water
  • 2 tbsp lemon juice
  • 2 tbsp oil
  • 1 tsp eno fruit salt

for tempering:

  • 2 tbsp oil
  • 1 tsp mustard
  • 5 chilli sliced
  • few curry leaves
  • pinch hing
  • ½ cup water
  • 2 tbsp sugar
  • ¼ tsp salt

for garnishing:

  • 2 tbsp coriander chopped
  • 2 tbsp coconut grated

Instructions

  • Firstly, in a large bowl take 2 cup besan, ¼ tsp turmeric, ¼ cup sugar and ½ tsp salt.
  • Mix well making sure everything is well combined.
  • Now add 1 cup water and mix well using a whisk.
  • Add water as required and whisk for 5 minutes.
  • Prepare a fluffy and light batter.
  • Cover and rest for 15 minutes.
  • Now add 2 tbsp lemon juice and 2 tbsp oil.
  • Continue to whisk for 5 more minutes to get a fluffy batter.
  • Further, add 1 tsp eno fruit salt and 2 tbsp water.
  • Mix gently until the batter turns frothy.
  • Transfer the batter immediately to the greased tray.
  • Place in a steamer and steam for 20 minutes.
  • Now cut the dhokla into pieces.
  • To prepare the tempering, heat 2 tbsp oil. Add 1 tsp mustard, 5 chilli, a few curry leaves, pinch hing, and splutter the tempering.
  • Further add ½ cup water, 2 tbsp sugar, and ¼ tsp salt.
  • Mix and boil for 2 minutes, making sure everything is well combined.
  • Pour the tempering over the dhokla and rest for 20 minutes so that the dhokla absorbs all the water.
  • Before serving, top with 2 tbsp coriander and 2 tbsp coconut.
