Firstly, in a vessel heat 1 tbsp oil, add 1 carrot, 1 potato and saute for 2 minutes.
Add 5 beans, ½ cup bottle gourd, 3 tbsp peas, ½ tsp turmeric, 1 tsp salt. Saute for 1 minute until the oil is coated well for vegetables.
Further add 3 tbsp peanuts, 3 cup water cover and boil for 5 minutes.
Once the vegetables are almost cooked, add ½ cup pumpkin and boil for 2 minutes. We add sweet pumpkin later as it does not take much time to cook.
Now add ¼ cup tamarind extract, 2 tomato, small piece jaggery and boil for 5 minutes.
Once everything is cooked well add 1½ cup cooked toor dal, prepared masala paste and mix well.
Add water adjusting the consistency as required, also check for salt.
Continue to boil for 3 more minutes until all the masala and flavours are well absorbed.
To prepare the tempering, heat 2 tbsp ghee. Add 1 tsp mustard, 1 dried red chilli and few curry leaves. Splutter the tempering, and pour over the kootu.
Finally, enjoy Mixed Vegetable Kootu with hot steamed rice, idli or dosa.
