Ingredients

for masala:

  • 1 tsp coconut oil
  • 1 tsp chana dal
  • 1 tbsp urad dal
  • 2 tsp coriander seeds
  • 1 tsp cumin
  • ¼ tsp methi
  • 1 tsp pepper
  • 1 inch cinnamon
  • 4 dried red chilli
  • few curry leaves
  • pinch hing
  • 1 tsp poppy seeds
  • ½ cup coconut grated
  • water for grinding

for kootu:

  • 1 tbsp oil
  • 1 carrot chopped
  • 1 potato chopped
  • 5 beans chopped
  • ½ cup bottle gourd chopped
  • 3 tbsp peas
  • ½ tsp turmeric
  • tsp salt
  • 3 tbsp peanuts
  • 3 cup water
  • ½ cup pumpkin chopped
  • ¼ cup tamarind extract
  • 2 tomato chopped
  • small piece jaggery
  • cup cooked toor dal

for tempering:

  • 2 tbsp ghee
  • 1 tsp mustard
  • 1 dried red chilli
  • few curry leaves

Instructions

Masala for mixed veg kootu:

  • Firstly, in a pan heat 1 tsp coconut oil. Add 1 tsp chana dal, 1 tbsp urad dal, 2 tsp coriander seeds, 1 tsp cumin, ¼ tsp methi, 1 tsp pepper, 1 inch cinnamon, 4 dried red chilli and few curry leaves.
  • Saute on low flame until the spices turn aromatic.
  • Now add pinch hing, 1 tsp poppy seeds and ½ cup coconut.
  • Turn off the flame and saute until the coconut turns aromatic.
  • Cool completely and transfer to the mixer jar.
  • Add water and grind to smooth paste. Keep aside.

Vegetable preparation for kootu:

  • Firstly, in a vessel heat 1 tbsp oil, add 1 carrot, 1 potato and saute for 2 minutes.
  • Add 5 beans, ½ cup bottle gourd, 3 tbsp peas, ½ tsp turmeric, 1 tsp salt. Saute for 1 minute until the oil is coated well for vegetables.
  • Further add 3 tbsp peanuts, 3 cup water cover and boil for 5 minutes.
  • Once the vegetables are almost cooked, add ½ cup pumpkin and boil for 2 minutes. We add sweet pumpkin later as it does not take much time to cook.
  • Now add ¼ cup tamarind extract, 2 tomato, small piece jaggery and boil for 5 minutes.
  • Once everything is cooked well add 1½ cup cooked toor dal, prepared masala paste and mix well.
  • Add water adjusting the consistency as required, also check for salt.
  • Continue to boil for 3 more minutes until all the masala and flavours are well absorbed.
  • To prepare the tempering, heat 2 tbsp ghee. Add 1 tsp mustard, 1 dried red chilli and few curry leaves. Splutter the tempering, and pour over the kootu.
  • Finally, enjoy Mixed Vegetable Kootu with hot steamed rice, idli or dosa.
