Firstly, heat 3 tsp oil and roast 1 cup garlic.
Roast until the garlic turns golden brown and crispy.
Once the garlic turns golden brown, keep aside.
In the same pan take ½ cup chana dal, ½ cup urad dal, 2 tbsp toor dal and roast on low flame until the dal turns aromatic.
Now add 2 tbsp sesame, 1 tbsp cumin, 1 tbsp coriander seeds and roast until the spices turn aromatic.
Transfer to the plate and keep aside.
In the pan heat 2 tsp oil, add 1 cup dry coconut, 10 dried red chilli and roast well.
Fry until the coconut turns golden brown and the chilli are puffed up.
Also, add a small piece of tamarind and roast well.
Cool completely, and transfer to the mixer jar.
Grind to fine powder.
Now add roasted dal and grind to a coarse powder.
Further add roasted garlic, 1 tbsp salt and a small piece of jaggery.
Pulse and grind to coarse powder.
Transfer the garlic chutney powder into the large box.
Finally, enjoy Garlic Podi or Poddu Podi with hot steamed rice, idli or dosa.
