Ingredients

  • ¾ cup whole moong dal / green gram dal
  • water for soaking
  • 3 tsp oil
  • 1 tsp mustard seeds / rai
  • ½ tsp cumin / jeera
  • pinch of hing / asafoetida
  • 1 small onion finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 green chili slit lengthwise
  • 2 to matoes finely chopped
  • ½ tsp turmeric / haldi
  • 1 tsp kashmiri red chili powder / lal mirch powder
  • 1 tsp coriander powder / daniya powder
  • ½ tsp garam masala powder
  • ½ tsp dry mango powder / aamchur powder
  • salt to taste
  • ½ tsp jaggery
  • 3 cups water add as required
  • 1 tbsp coriander leaves finely chopped

Instructions

  • firstly in a large kadai heat oil.
  • further add mustard seeds, cumin and hing. allow to splutter.
  • additionally, add onions and continue to saute.
  • also add ginger garlic paste and green chili. saute well till the raw aroma disappears.
  • furthermore, add tomato and saute well.
  • saute till the tomatoes turn soft and mushy.
  • additionally, add turmeric, chili powder, coriander powder, garam masala powder, dry mango powder, jaggery and salt.
  • saute on low flame till the masala gets cooked well completely and releases oil from sides.
  • further add sprouted moong dal.
  • also add water and mix well.
  • adjust the consistency by adding water as required.
  • cover and simmer for 20 minutes or pressure cook for 2 whistles.
  • cook the dal well however, do not over cook as the sprouts will loose their nutritional value.
  • finally, serve sprouts curry along with jowar roti or rice.
