Ingredients

For pressure cooking:

  • 2 cup moong sprouts
  • ½ tsp turmeric
  • ½ tsp salt
  • 2 cup water

For curry:

  • 2 tbsp oil
  • 1 bay leaf
  • 1 tsp cumin
  • pinch hing
  • 2 tbsp ginger garlic chopped
  • 2 onion finely chopped
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • ½ tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp salt
  • 2 tomato finely chopped
  • 2 tbsp coriander finely chopped

Instructions

  • In a pressure cooker, take 2 cups of moong sprouts, ½ tsp turmeric and ½ tsp salt.
  • Also, add 2 cups of water and pressure cook for a whistle.
  • Now, in a kadai, heat 2 tbsp oil. Add 1 bay leaf, 1 tsp cumin, and a pinch of hing, and sauté till the spices turn aromatic.
  • Further, add 2 tbsp of ginger-garlic and sauté well.
  • Also, add 2 onions and sauté until golden brown.
  • Keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, 1 tsp coriander powder, 1 tsp garam masala and 1 tsp salt.
  • Sauté on a low flame till the spices turn aromatic.
  • Now add 2 tomatoes and cook until the tomatoes turn soft and mushy.
  • Continue cooking until the oil separates from the sides.
  • Add cooked sprouts and mix well, adjusting the consistency and salt.
  • Simmer for 5 minutes, or until the flavours are absorbed well.
  • Add in 2 tbsp coriander and mix well.
