Ingredients

  • 1 bowl basmati rice cooked
  • 3 - 4 tsp of oil
  • 2 spring onion finely chopped
  • ½ carrot finely chopped
  • 1 capsicum finely chopped
  • 4-5 french beans finely chopped
  • ¼ cup peas fresh / frozen
  • 3 to 4 garlic finely chopped
  • ½ inch ginger finely chopped (optional)
  • 3 tsp soy sauce
  • 3 tsp vinegar
  • 1 tsp black pepper
  • salt to taste

Instructions

  • firstly, heat oil in a wok or a pan. add 3-4 tsp of oil.
  • additionally, add black pepper and garlic. saute for few seconds.
  • also add the spring onions and saute for about 2 minutes.
  • furthermore, add capsicum and fry for a minute.
  • then add all the finely chopped veggies.
  • repeatedly stir and toss the vegetables so that they are cooked well. add some salt while cooking vegetables.
  • the vegetables should be almost cooked. then add the 3 tsp of soy sauce.
  • also add 3 tsp of vinegar.
  • furthermore, add almost cooked rice. i have added pinch of salt and 1 tsp of oil while cooking rice.
  • also add crushed black pepper after adding cooked rice.
  • furthermore, fry for a few minutes till the rice and vegetables mix well. make sure you do not add more salt as soya sauce has salt content.
  • finally, serve the veg fried rice hot plain or with dal tadka or veg manchurian gravy.
