in a large bowling mix add 1 cup of rava/sooji/semolina
add ½ cup of yoghurt/curd and mix well rava and curd.
now add ½ cup of water and make a thick batter. add some more water if required.
add ¾ tsp of salt and mix it well. keep it aside for 20 minutes.
after 20 minutes, now add ½ tsp of baking soda. once baking soda is added, start preparing uttappa immediately.
in a dosa pan pour a ladleful of uttappa batter and spread in a circular motion. maintain the thickness of uttappa and it should not be like thin dosa.
now spread the toppings on top of the uttappa evenly. after the topping have been added press gently so the toppings are pressed into the batter.
add 1 tsp of oil around the uttappa.
cover it and let it cook for 1-2 minutes in low flame.
flip over on the other side once the uttappa turns golden brown. cook it for 1-2 minutes in a low flame.
your instant rava uttappam or sooji uttappam is ready. serve it with chutney of your choice
