Firstly, in a pan heat 2 tbsp oil. Splutter 1 tsp cumin, ½ tsp mustard, pinch hing and few curry leaves.
Add 2 chilli, ½ inch ginger and saute well.
Also, add ½ onion and saute until the onions soften slightly.
Further add ½ turmeric, 1 tsp chilli powder and saute until the spices turn aromatic.
Add in ½ capsicum, 3 tbsp peas and saute for a minute.
Add 3 boiled potatoes, ½ tsp chaat masala, ½ tsp cumin powder and mix well.
add 2 tbsp coriander and mix well. Aloo masala stuffing is ready.
To prepare the sandwiches, spread butter on 2 slices of bread.
Also, spread green chutney on one side of bread.
Top with aloo stuffing and cheese.
Now add tomato sauce and cover with the bread slice.
Toast the sandwich on the pan till the sandwich turns golden and crispy.
Flip over and toast both sides to golden brown.
