firstly, in a large bowl take 2 cup rice, 1 cup kala chana and ½ tsp methi.
rinse well and soak in water for at least 6 hours.
transfer the soaked rice and chana into a mixer grinder.
grind to a slightly coarse paste adding water as required.
transfer the batter to a large bowl and beat with a hand to aid fermentation.
cover and ferment for 8 hours.
now add 1 tsp salt and mix gently.
heat the dosa pan, and spread the batter thin.
pour in half tsp oil.
cover and roast the dosa until it turns golden brown and crisp.
