Firstly, in a kadai heat 2 tbsp ghee and fry 2 tbsp cashew and 2 tbsp raisins.
Roast them till the cashews turn golden brown. Keep aside.
In the same ghee, add spices and saute till they turn aromatic.
Further add ½ onion, 5 cloves garlic, 1 inch ginger, 2 chilli till the onion softens.
Pour in 2 cup water and 1 tsp salt. Mix and get to a boil.
Add 1 cup basmati rice and mix gently.
Cover and simmer for 20 minutes or until the rice are cooked well.
Fluff the rice gently, and add fried cashew, raisins, and 2 tbsp coriander. Mix gently.
