Ingredients

  • 2 tbsp ghee
  • 2 tbsp cashew
  • 2 tbsp raisins
  • 1 tsp cumin
  • 1 bay leaf
  • 1 inch cinnamon
  • 3 pods cardamom
  • 1 tsp pepper
  • 1 tsp cloves
  • ½ onion sliced
  • 5 cloves garlic finely chopped
  • 1 inch ginger finely chopped
  • 2 chilli slit
  • 2 cup water
  • 1 tsp salt
  • 1 cup basmati rice soaked 20 minutes

Instructions

  • Firstly, in a kadai heat 2 tbsp ghee and fry 2 tbsp cashew and 2 tbsp raisins.
  • Roast them till the cashews turn golden brown. Keep aside.
  • In the same ghee, add spices and saute till they turn aromatic.
  • Further add ½ onion, 5 cloves garlic, 1 inch ginger, 2 chilli till the onion softens.
  • Pour in 2 cup water and 1 tsp salt. Mix and get to a boil.
  • Add 1 cup basmati rice and mix gently.
  • Cover and simmer for 20 minutes or until the rice are cooked well.
  • Fluff the rice gently, and add fried cashew, raisins, and 2 tbsp coriander. Mix gently.
  • Finally, enjoy Ghee Rice Recipe with curry or dal.
