Ingredients

  • ½ lauki / bottle gourd
  • 1 onion sliced
  • few curry leaves
  • 2 tbsp coriander chopped
  • 2 chilli chopped
  • pinch hing
  • 1 tsp ginger paste
  • ¼ tsp ajwain
  • ½ tsp chilli powder
  • ¼ tsp turmeric
  • ½ tsp chaat masala
  • 1 cup besan / gram flour
  • ¼ cup rice flour
  • ½ tsp salt
  • oil for frying

Instructions

  • Firstly, peel the skin off ½ a lauki and grate it finely.
  • Squeeze the juice and add grated lauki into the bowl.
  • Also, add 1 onion, few curry leaves, 2 tbsp coriander, 2 chilli, pinch hing, 1 tsp ginger paste, ¼ tsp ajwain, ½ tsp chilli powder, ¼ tsp turmeric and ½ tsp chaat masala.
  • Further add 1 cup besan, ¼ cup rice flour and ½ tsp salt.
  • Squeeze and mix well, making sure everything is well combined.
  • Keep squeezing and mix without adding any water.
  • The water in the lauki is enough to form the dough. Add more besan if required.
  • Now, drop the dough into hot oil, forming a random shape.
  • Fry on medium flame, stirring occasionally.
  • Fry until the pakoda turns golden brown and crisp.
  • Finally, drain off the Lauki Pakora and enjoy with hot tea.
