Ingredients

  • 2 tbsp oil
  • 6 cloves
  • 1 bay leaf
  • 1 inch cinnamon
  • 1 black cardamom
  • 1 tsp cumin
  • 1 tsp pepper
  • 1 javetri
  • 4 pods cardamom
  • 2 tbsp cashew
  • 5 chilli slit
  • 2 cloves garlic finely chopped
  • 1 inch ginger finely chopped
  • ½ onion sliced
  • cup peas
  • 1 tsp salt
  • 2 cup water
  • 1 cup basmati rice soaked 20 minutes
  • 2 tbsp lemon juice
  • 1 tsp ghee

Instructions

  • Firstly, in a kadai heat 2 tbsp oil and saute spice till they turn aromatic.
  • Also, saute 2 tbsp cashew till they turn golden brown.
  • Further, add 5 chilies, 2 cloves garlic,1 inch ginger, ½ onions and saute until the onion softens.
  • Now add 1½ cup peas, 1 tsp salt and stir fry.
  • Pour in 2 cup water and get to a boil.
  • Once the water comes to a boil, add 1 cup basmati rice, 2 tbsp lemon juice, and 1 tsp ghee. Lemon juice helps to cook the rice uniformly.
  • give a good stir. Cover and simmer for 20 minutes once the water comes to a boil.
  • Fluff the rice gently making sure the rice grains are not broken.
  • Finally, enjoy Matar Pulao Recipe with sabzi or raita.
