Firslty, in a bowl take 1 cup curd. Add 2 tbsp biryani masala, ¼ tsp turmeric, ½ tsp chilli powder, 1 tsp salt, 1 tsp ginger garlic.
Also, add 2 tbsp mint, 2 tbsp coriander and mix well.
Add in ½ carrot, 5 beans, 5 florets cauliflower and 3 tbsp peas.
Mix well, making sure everything is well combined. Marnate for 30 minutes.
To cook the rice, in a large vessel, take enough water, add spices and 3 chilli. Get the water to boil.
Now add 1½ cup basmati rice, 1 tsp ghee and 2 tsp lemon juice.
Boil for 5 minutes or until the rice is 80% cooked.
Drain off the rice and keep aside.
In a large kadai, heat 2 tbsp ghee. Fry 2 tbsp cashew, 2 tbsp raisins and 20 cubes paneer.
Fry till the paneer turns golden brown. Keep aside.
Add 2 tbsp oil and saute the spices till they turn aromatic.
Also, saute 1 onion till it turns golden brown.
Add in ½ capsicum and saute slightly.
Now add marinated vegetables and cook well. Cook till the vegetables are almost cooked.
Add a handful of coriander, a handful of mint, 2 tbsp of fried onion, and half of the paneer and cashews.
Now, layer with 80% cooked rice.
Also, top with coriander, mint, fried onion, and the remaining of the paneer and cashews.
Also, sprinkle biryani masala, and pour 1 cup of saffron milk.
Cover and simmer for 20 minutes, or until the rice is cooked well.
